The Enz Vineyard of Lime Kiln Valley has a reputation for the production of distinctive and flavorful red wines. The topography and geology at the Enz Vineyard are truly unique, due to its immediate proximity to the San Andreas Fault. The top soils of the vineyard are composed of well drained decomposed Granite which overlay water-holding sub soils of limestone. The drought year of 2008 in combination with a poor fruit set lead to a meager crop of one third of a ton per acre. this wine has aromas of black cherry and wet stones. Fruit flavors lead to firm tannins with a lingering flinty finish.

Cabernet Pfeffer is one of the grape varieties that was brought nearly to extinction by the ravages of the Phylloxera louse in France in the late 1800s. Plantings of this variety still exist in old vine plantings in San Benito County. Pfeffer is German for "pepper" and the wines produced from this grape have distinctive spice aromas of crushed pepper corns. Grown in Paso Robles, the fruit was delivered in refrigerated trucks to the winery on separate harvest dates and cold fermented in separate stainless steel tanks. Each lot was blended prior to bottling to produce a vibrant wine with a rich mid-palate and bright acidity.
